Directions

  1. Add the salt, coriander, turmeric, ginger, garlic, shallots, and chili flakes to a food processor and blend until smooth, scraping down the bowl as needed.
  2. Brown the beef in batches in a non-stick pan over medium heat, then transfer to a slow cooker.
  3. Fry the lemongrass in the same pan until fragrant, then add to the slow cooker with the beef.
  4. Reduce heat to medium-low, add the spice paste to the pan, and fry until fragrant. Add a bit of water if it starts to burn. Transfer to the slow cooker.
  5. Add coconut milk, half cup of water, and brown sugar to the slow cooker, stir to combine. Cook on LOW for 6-8 hours until beef is tender and coated in sauce.
