  1. Peel and mince the ginger. Finely chop the cilantro.
  2. In a small bowl, mix mayonnaise and chipotle chiles. In another bowl, combine pineapple, orange preserves, lime juice, ginger, and cilantro for the salsa. Season with salt and pepper.
