- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Set aside to cool, then chop.
- Add half of the olive oil to the skillet over medium-high heat. Add cubed sweet potatoes and season with salt and black pepper. Sauté for about 10-12 minutes, stirring throughout, until sweet potatoes are cooked through.
