Ingredients
Cornstarch

Directions
- Preheat oven to 400°F and position racks in the lower and upper thirds. Rinse brown rice under running water and set aside.
- Drain tofu and gently squeeze out water. Slice into two 1-inch slabs, sandwich between towels, and place a heavy object on top to press.
- Trim and halve Brussels sprouts. Toss with half of the olive oil and arrange on a baking sheet, cut side down. Sprinkle with salt.
- Slice tofu into cubes. Whisk remaining olive oil and soy sauce for tofu, coat tofu, then toss with cornstarch. Arrange on a baking sheet.
- Boil rice for 30 minutes, drain, return to pot, cover for 5 minutes, then fluff with a fork.
- Bake Brussels sprouts on lower rack and tofu on upper rack for 25-30 minutes, tossing halfway through.
- For the glaze, whisk ingredients in a saucepan, bring to a gentle boil, and reduce by half.
- Toast sesame seeds in a pan over medium-low heat until golden and popping.
- Assemble plates with rice, sprouts, tofu, glaze, sesame seeds, and chopped cilantro.
