Ingredients

Directions
- Heat two-thirds of the canola oil in a large skillet over high heat.
- Add the shrimp and cook for 1 minute on each side, then remove from the pan.
- Add the remaining canola oil to the skillet with the chopped onion. Cook over medium heat for 5 minutes, stirring occasionally.
- Stir in the ginger, cumin, coriander, turmeric, paprika, curry powder, chili powder, salt, and garlic. Cook for 30 seconds.
- Add the tomato sauce and mix well.
- Pour in the coconut milk and return the shrimp to the pan. Stir well to combine.
- Serve garnished with fresh chopped cilantro and chili peppers.
