Directions
- De-vein, wash, and dry the prawns.
- In a separate bowl, make a batter by combining the flour with the Curry Paste, water, and cilantro. Stir well and allow to stand for 10 minutes.
- Heat enough oil in a large pot for deep frying (usually 2-3 inches deep).
- Dip each prawn into the batter and then drop into the hot oil (a few prawns can be fried at a time) but take care not to overcrowd the pan or deep-fryer.
- Fry the prawns for a few minutes until they have turned golden brown and the prawns are cooked through. Drain well on kitchen paper and serve hot.
