- 1. Wash veggies and fruit with vegetable wash spray or white vinegar mixed with water in a 1:10 ratio. 2. Chop parsnips, yukon gold potatoes and apples into cubes. 3. Pour 4 cups vegetable broth into a pot, then scoop all chopped veggies into pot. 4. Boil for 15-20 minutes or until potato is soft and mashable. 5. Add lemon juice and extra virgin olive oil to soup. 6. You can blend it for a puree consistency or keep it chunky. 7. May season with dried garlic, onion, sage, rosemary, thyme, and/or parsley. Serve and enjoy!
