Directions

  1. Preheat the oven to 350°F.
  2. Heat a large pan over medium heat and add the olive oil. Cook the chopped chicken until golden brown, about 5-7 minutes, then remove and set aside.
  3. In the same pan, add the chopped onion, garlic, chorizo, and peppers. Sauté for 5 minutes.
  4. Return the chicken to the pan and add the taco seasoning, rice, chopped tomatoes, chicken stock, and kidney beans. Mix well.
  5. Cover with a lid and bake in the oven for 20 minutes.
  6. Remove from the oven, sprinkle cheese on top, and bake uncovered for another 25 minutes.
