Ingredients

Directions

  1. Dice onion and tomatoes and mince garlic.
  2. Heat oil in a large skillet on medium heat. Add garlic and saute until fragrant for about 30 seconds.
  3. Add onion and saute until translucent. Then add diced tomatoes and cook them until they soft, about 3-4 minutes.
  4. Add spinach, beans, rice and cook for a couple of minutes. Add vegetable broth and bring to a boil.
  5. Season with curry powder, salt and pepper.
  6. Reduce heat to low, cover and simmer 18-20 minutes until rice is tender.
