Ingredients
- Crushed red pepper flakes

Directions
- Preheat the oven to 400°F. Line a large sheet pan with parchment paper or foil.
- Peel and thinly slice the carrots. Wash and chop the red potatoes into small pieces. Halve the zucchini and cut into thick coins. Coarsely chop the broccoli. Remove stems and seeds from the peppers and chop into medium-sized pieces. Chop the sausage into thick coins.
- Place all the veggies and sausage on the sheet pan.
- In a small bowl, mix all the seasonings, salt, and pepper with the olive oil until well combined.
- Pour the seasoning and oil mixture over the veggies and sausage, and toss thoroughly to coat.
- Bake in the oven for 15 minutes. Remove, toss the veggies and sausage, and return to the oven for another 10-20 minutes or until veggies are crisp-tender.
- Remove from oven and top with freshly grated Parmesan cheese.
