Directions

- Heat a large non-stick frying pan. Add the mince, onion and garlic and cook for 3-4 minutes, breaking up any lumps of meat while stirring.
- Mix in the Moroccan seasoning, cinnamon and apple and cook for a further 2 minutes. Add in the tomatoes, stock, tomato paste, orange juice and rind, vegetables, chickpeas, water and chilli, if using.
- Simmer for 10-12 minutes, until the vegetables are cooked and the sauce has reduced and thickened slightly, stirring occasionally. Add some salt to taste if required.
- Serve with some cooked couscous.
