Directions

  1. For the Chicken
  2. Preheat your oven to 425F / 220C
  3. Mix together all of the seasonings, oil and lemon juice. Add the chicken and mix thoroughly. Allow to marinate for at least 30 minutes.
  4. Add the chicken to a sheet pan and cook for 10 minutes.
  5. Turn the oven to broil and move the chicken to the top rack. Cook for an additional 5-8 minutes to brown the tops of the chicken. Be sure to watch it closely and check on it often to make sure it is not burning.
  6. Remove from the oven when the chicken has browned properly and allow to rest.
  7. Cut the chicken into thin slices.
  8. For the Vegetables and Lettuce
  9. Wash and cut the cucumber and tomatoes into a small dice. Deseed each of them before cutting.
  10. Cut the red onion into thin slices.
  11. Add all of the vegetables to a bowl and add the vinegar, oil, and salt. Stir and allow to incorporate.
  12. Wash and cut the lettuce into thin strips. Add oil, vinegar and salt to taste.
  13. For the Wrap
  14. Spread some hummus onto each tortilla and add chicken, lettuce, the vegetable mix, and feta to each wrap.
  15. Notes
  16. If you are going to meal prep these, don't make the burritos until you are ready to eat them. The tomato and cucumber mix can be prepped ahead of time and kept in the fridge but I wouldn't dress the lettuce in advance as it will get soggy.
