Directions
- Prepare couscous as per package directions. .
- Slice chicken into tenders. Coat a pan with oil and heat over medium-high heat. Cook tender for 5-10 minutes or until cooked through and no longer pink; set aside.
- Combine parsley, mint, lemon juice, oil, garlic, dash of salt and pepper in a small bowl.
- Cut chicken tenders into bite size pieces and mix with half of parsley mixture. Stir the remaining parsley mixture into the couscous along with tomato and cucumber.
- To assemble wraps, spread some of the couscous mixture onto each wrap.
- Divide the chicken among the wraps. Roll the wraps up like a burrito, tucking in the sides to hold the ingredients in. Serve cut in half.
