Directions
- Preheat the oven to 425°F. Place the chicken breasts in a 13×9 casserole dish and bake until the internal temperature reaches 165°F, about 30-40 minutes depending on the size.
- While the chicken is baking, chop the onion and fry the bacon pieces until crispy. Remove the bacon from the pan and sauté the onions until tender.
- Remove from heat and combine the crispy bacon, onions, jalapenos, cream cheese, mayonnaise, cheddar, and half of the Parmesan cheese. Mix until well combined.
- Remove the chicken from the oven and reduce the temperature to 350°F. Spread the jalapeno popper mixture over each chicken breast until well covered.
- For the crumb topping, mix together the crushed pork rinds, remaining Parmesan cheese, and melted butter. Sprinkle on top of the jalapeno popper topped chicken. Bake until the tops are lightly browned, about 15 minutes.
