Directions
- Heat half of the olive oil in a large skillet over medium-high heat. Brown the ground pork, breaking it up with a wooden spoon. Transfer to a plate and set aside.
- Return the pan to medium heat and add the remaining olive oil. Sauté the garlic and onion until softened, about 4 minutes. Increase the heat to medium-high and stir-fry the eggplant and bell pepper for 2 to 3 minutes.
- In a small bowl, mix the soy sauce, brown sugar, and Sriracha. Add this mixture to the skillet along with the green beans and cooked pork. Sauté until the green beans are bright green and the meat is warmed through.
- Top with freshly chopped cilantro and serve immediately.
