  1. In a small bowl, combine the oyster sauce, soy sauce, and cilantro. Set aside.
  2. Pat the shrimp dry with paper towels. In a medium bowl, toss the shrimp with cornstarch to coat.
  3. Heat half of the cooking oil in a wok or large sauté pan over high heat. Add the shrimp in a single layer and sear until browned on one side, about 1 minute. Flip and sear the other side for another minute. Remove and set aside.
  4. Reduce heat to medium. Add the remaining oil, green onions, garlic, and ginger to the wok. Stir fry for 1 minute until fragrant.
  5. Pour in the sauce mixture and return the shrimp to the pan. Stir fry for another minute until the shrimp is cooked through. Serve immediately.
