Directions
- Melt the coconut oil in a wok or large frying pan over medium-high heat. Add the chopped scallions and minced garlic, stir-frying for 1 minute. Add the shrimp and stir for another minute until they turn bright pink and tender.
- Add the snow peas, corn, and broccoli, along with 2 tablespoons of water. Allow the water to steam the vegetables. Add the egg noodles, breaking them up with your fingers as you add them. Stir-fry for a minute until the noodles are warmed through and soft.
- Remove from heat, pour in the soy sauce and fish sauce, and give everything a final stir before serving.
