  1. Pat dry the scallops thoroughly with paper towels before cooking.
  2. Heat a large cast iron skillet over medium heat.
  3. In a medium bowl, toss the scallops with olive oil to coat. Season with salt, black pepper, red pepper flakes, and paprika.
  4. Add a small amount of butter to the hot skillet to coat the bottom. Add scallops without overcrowding and sear for about 2 minutes on each side until golden.
  5. Add remaining butter and garlic to the skillet. Remove from heat and stir the garlic into the butter for about 30 seconds.
  6. Squeeze lemon juice over the scallops, stir to combine with butter, and sprinkle with parsley and lemon zest.
  7. Drizzle with extra virgin olive oil before serving.
