- wash & slice zucchini and eggplant lengthwise into 1/4 inch slices, salt and put on paper towels or rack for about an hour to get the excess moisture out. Wash and slice portobello caps into 1/4 in slices and saute in butter, remove and set aside. In the same pan, saute the onion, garlic, and hamburger until browned, remove from pan and set aside. Use about a 1/2 C of sauce on the bottom of an 8x8 baking pan or dish (I use Corningware). Squeeze excess moisture from the zucchini and the eggplant by pressing between two paper towels. Put 1/2 each of the zucchini and eggplant slices in the bottom of the pan, layer mushroom slices on top and 1/2 of the hamburger mixture. 1/2 C of sauce over this layer. Use the remaining zucchini and eggplant and layer over the sauce and top with the remaining hamburger mixture and another 1/2 cup of sauce. Bake @ 350 for 30-40 minutes uncovered. 30 minutes works if you like your veggies al dente (firm texture). Take the lasagna out of the oven. Mix the ricotta and mozzarella cheese together and drop spoonfulls over the top of the casserole to make a layer of cheese. Bake for another 15-20 minutes uncovered. Remove from oven and let rest for 15 minutes before serving. I don't use a lot of salt or spices, you can spice it up if you like.
