Directions
- lightly cook spinach, either in the microwave, lightly saute or thaw if using frozen. Squeeze out as much liquid as possible. Set aside
- Slice mushrooms. Set aside.
- Cook bacon. Set aside.
- Spray pie pan with cooking oil. Preheat oven to 350 deg F.
- Beat eggs, cream, parsley, and spices.
- Layer in pie pan: spinach, mushrooms, bacon, cheese (except parmesan). Pour egg mixture over top, evenly. Top with parmesan.
- Bake, uncovered, for aprox 40 mins, or until top is browned and the middle is cooked.
