Ingredients
- Sun-dried tomatoes

- Cornstarch

Directions
- Cook the gnocchi according to package instructions. Drain and set aside.
- Reserve the oil from the sun-dried tomatoes for later use.
- In a large skillet, heat the butter and reserved sun-dried tomato oil over medium-high heat.
- Add the chicken strips, season with salt and pepper, and cook until golden brown and no longer pink inside. Transfer the chicken to a plate and set aside.
- If needed, add more sun-dried tomato oil to the skillet. Sauté the garlic and sun-dried tomatoes for 2 to 3 minutes until fragrant.
- Add the milk, half and half, and Parmesan cheese to the skillet.
- In a small bowl, whisk the cornstarch and water, then add to the skillet. Stir until the sauce thickens, about 1 minute.
- Stir in the gnocchi and return the chicken to the skillet.
- Drizzle sauce over the chicken, garnish with parsley, and serve warm.
