Directions

  1. Prepare the pasta according to package directions, reserving some of the pasta water for later in the recipe.
  2. Preheat the oven to 400°F and line a baking tray with foil.
  3. Cook the bacon in a frying pan over medium-high heat until crispy, then set aside on paper towels to drain.
  4. In a mixing bowl, combine the cubed pumpkin, honey, salt, and olive oil. Transfer to the prepared baking tray, sprinkle with fresh thyme, and roast for 30-45 minutes until caramelized and cooked through.
  5. Remove from the oven, discard the thyme, and transfer the pumpkin to a bowl. Puree with an immersion blender or in a blender, adding milk to aid blending.
  6. In a large frying pan, sauté the onion and garlic until soft and translucent. Add the pumpkin puree and chicken broth, then simmer.
  7. Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  8. Stir in the cooked pasta, tossing to coat well. Add pasta cooking water if needed to loosen the sauce.
  9. Serve the pasta topped with crispy bacon and additional Parmesan cheese.
