  1. Preheat oven to 350°F (175°C) and coat a 9x5-inch loaf pan with cooking spray.
  2. Spread two-thirds of the shredded coconut on a baking sheet and toast in the preheated oven for 5-7 minutes, or until lightly golden. Watch closely to prevent burning.
  3. In a large bowl, mash the bananas. Whisk in the eggs, coconut oil, brown sugar, rum, melted butter, and vanilla extract until well combined.
  4. Gently fold in the toasted coconut.
  5. In a separate bowl, whisk together the flour, baking powder, salt, and baking soda.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
