Directions

  1. Cook quinoa according to package directions.
  2. Cut the chicken into 1-inch pieces.
  3. In a large bowl, whisk together the yogurt, one-fourth of the olive oil, one-third of the vinegar, garlic, oregano, turmeric, salt, and red pepper flakes.
  4. Add the chicken and stir to coat. Cover and marinate in the refrigerator for at least 1 hour and up to 8 hours.
  5. Preheat an outdoor grill or grill pan to medium-low heat.
  6. Thread the chicken pieces onto skewers, discarding the marinade. Sprinkle with salt and pepper.
  7. Grill the chicken, turning occasionally, until golden brown and cooked through to 165°F, about 15 minutes.
  8. In a medium bowl, whisk together the remaining olive oil and vinegar, and season with salt and pepper.
