Ingredients

- Combine bite-size chicken chunks, honey, paprika, cumin, salt, pepper, two-thirds of the lemon juice, two-thirds of the garlic, a pinch of crushed red pepper flakes, and a third of the olive oil in a large zip-top bag. Seal and chill for 30 minutes or up to 12 hours.
- Preheat the oven to 425°F. Cook quinoa according to package instructions.
- Toss sweet potato matchsticks with half of the remaining olive oil, salt, and pepper on a baking sheet. Bake for 15-20 minutes, flip, then bake for another 15-20 minutes.
- Toss asparagus with the remaining olive oil, salt, and pepper on a baking sheet. Roast in the oven for 10-15 minutes.
- Spread marinated chicken chunks on a baking sheet and roast for 15-20 minutes or until cooked through.
- For the garlic tahini yogurt, combine Greek yogurt, tahini, remaining garlic, remaining lemon juice, and chopped fresh mint. Adjust seasonings to taste.
