  1. Combine bite-size chicken chunks, honey, paprika, cumin, salt, pepper, two-thirds of the lemon juice, two-thirds of the garlic, a pinch of crushed red pepper flakes, and a third of the olive oil in a large zip-top bag. Seal and chill for 30 minutes or up to 12 hours.
  2. Preheat the oven to 425°F. Cook quinoa according to package instructions.
  3. Toss sweet potato matchsticks with half of the remaining olive oil, salt, and pepper on a baking sheet. Bake for 15-20 minutes, flip, then bake for another 15-20 minutes.
  4. Toss asparagus with the remaining olive oil, salt, and pepper on a baking sheet. Roast in the oven for 10-15 minutes.
  5. Spread marinated chicken chunks on a baking sheet and roast for 15-20 minutes or until cooked through.
  6. For the garlic tahini yogurt, combine Greek yogurt, tahini, remaining garlic, remaining lemon juice, and chopped fresh mint. Adjust seasonings to taste.
  7. Divide quinoa among bowls and top with chicken, sweet potatoes, asparagus, olives, sun-dried tomatoes, goat cheese, cucumber, and garlic tahini yogurt.
