- Weigh out the chicken slices to the correct weight and pad down with paper towels until dry.
- Weigh out the lettuce to the correct weight, break it into smaller pieces and add both the chicken and lettuce together into a large bowl.
- Take out two slices of bread and spread the butter onto the bread.
- Using a table spoon of mayonnaise, mix the chicken and lettuce together with the mayonnaise. Ensure this is done evenly and thoroughly.
- Apply the filling (chicken, lettuce & mayo) to the sandwich by spooning it out evenly across the bottom slice of bread.
- Add the top slice of bread to the top of the sandwich and squeeze firmly to make a better fit.
- Cut across the slices of bread horizontally (NOT diagonally) such that the sandwich is split in two.
