Ingredients

  • Chicken breast

    Broilers or fryers, meat only, raw

    1 breast fillet or 118g

  • Bagels

    Plain, enriched, with calcium propionate (includes onion, poppy, sesame)

    1 medium bagel or 105g

  • Tomatoes

    Red, ripe, raw, year round average

    3 slice, medium or 60g

  • Lettuce

    Romaine or cos, raw

    2 leaf outer or 56g

  • Mayonnaise

    Regular, with salt

    1 tbsp or 14g

Directions

  1. Slice the bagel in half and toast lightly if desired. Spread half of the mayonnaise on the cut side of the top half of the bagel and the remaining half on the bottom half.
  2. Pound the chicken breast to an even thickness using a kitchen mallet or the back of a heavy jar. Cook in a nonstick pan over medium heat with about a teaspoon of olive oil for about 4 minutes per side, or until fully cooked. Slice the chicken breast into 1/2 cm thick slices.
  3. Slice the tomatoes into 1/2 cm thick slices.
  4. Arrange the lettuce on the bottom half of the bagel, top with slices of cooked chicken, balance the tomatoes on top of the chicken, and cover with the remaining half of the bagel.
