- In a large pot, heat olive oil over medium heat. Once hot, add scallions and jalapenos, and sauté until tender, about 2 minutes. Add garlic during the last 30 seconds of sautéing.
- Add chicken broth, tomatoes, cumin, and season with salt and pepper to taste. Add chicken breasts and bring mixture to a boil over medium-high heat. Reduce heat to medium, cover, and cook, stirring occasionally, until chicken is cooked through, about 10-15 minutes.
- Reduce heat to low, remove chicken from the pot, and let it rest on a cutting board for 5 minutes. Shred the chicken and return it to the soup. Stir in cilantro and lime juice.
- Add avocados to the soup just before serving. If not serving immediately, add avocado to each bowl individually, about 1/3 avocado per serving.
