Directions
- Cook the rice according to package directions. In a re-sealable heavy-duty plastic bag, mix soy sauce, ketchup, ginger, and minced garlic. Add the chicken, seal the bag, and turn to coat with the marinade. Let it stand for 15 minutes.
- Heat 1 tablespoon of oil in a 10-inch skillet or wok over medium-high heat. Add scallions and bell peppers; stir-fry until they are crisp-tender. Remove from the skillet.
- Heat the remaining 1 tablespoon of oil in the skillet. Add the chicken and stir-fry for 4 to 5 minutes or until no longer pink in the center. Stir in the bell pepper mixture. Serve over the cooked rice.
