Directions

  1. Cook the rice according to package directions. In a re-sealable heavy-duty plastic bag, mix soy sauce, ketchup, ginger, and minced garlic. Add the chicken, seal the bag, and turn to coat with the marinade. Let it stand for 15 minutes.
  2. Heat 1 tablespoon of oil in a 10-inch skillet or wok over medium-high heat. Add scallions and bell peppers; stir-fry until they are crisp-tender. Remove from the skillet.
  3. Heat the remaining 1 tablespoon of oil in the skillet. Add the chicken and stir-fry for 4 to 5 minutes or until no longer pink in the center. Stir in the bell pepper mixture. Serve over the cooked rice.
  4. Note: Slightly freeze the chicken thighs to ease skinning and deboning.
