Directions
- Preheat the oven to 400°F. Wash and dry the potatoes, then pierce them with a fork.
- Wrap each potato in foil and place on a baking sheet. Bake for 40-60 minutes until fork-tender.
- Reduce oven temperature to 350°F. Spray a 13x9-inch casserole dish with nonstick spray and set aside.
- Once potatoes are cool, peel and discard the skins. Mash the flesh with sour cream, milk, pepper, salt, garlic powder, and onion powder until smooth.
- Cook the frozen broccoli according to package instructions.
- Spread mashed potatoes in the casserole dish. Top with 1/2 cup each of cheddar and mozzarella cheese, and half of the scallions.
- Layer broccoli on top, then add remaining cheeses and scallions.
