- Heat a wok or large skillet to medium high heat. Add in 1/2 tablespoon of sesame oil to pan. Next add shrimp. Sauté shrimp for 2 minutes a side, remove, and set aside.
- Next add in the cauliflower rice. Sauté 3-4 minutes stirring until rice is soft and warm.
- Push rice to sides then add carrots, celery, scallion and diced pepper. Sauté the vegetables until warm and crispy.
- Push mixture to the edges of the pan. Add last 1/2 tbsp of sesame oil to center then add egg and scramble and cook just until set. Add shrimp back in pan and toss with soy sauce. Serve while veggies are still crisp for best taste.
