Ingredients

Directions

  1. Soak kidney beans in water for 2 hours or overnight.
  2. Mince garlic, dice vegetables to a uniform size.
  3. Cook onion, celery, and carrots together in oil in big stock pot.
  4. When softened add in minced garlic and seasoning and cook until fragrant.
  5. Add beans and cover with water until covered.
  6. Bring to a low simmer and add sliced sausage.
  7. Cook 1.5-2 hours until thickened, add hot sauce.
  8. 45 mins before end, cook rice.
  9. Lightly mash beans. Serve over rice.
