Ingredients

Directions

  1. Cook rice according to package directions.
  2. Meanwhile, dice beef into 1 inch pieces.
  3. Dice one large onion.
  4. In a large skillet, sauté meat and onion in oil until lightly browned, about 3 minutes. Add carrots and potatoes. Discard excess oil.
  5. Add 3 cups of water and bring to a boil. Reduce heat, cover and simmer until meat and potatoes are tender, about 10 minutes.
  6. Add curry and sauté to coat.
  7. Simmer for another 5 minutes or so, stirring constantly (if curry sauce becomes too thick, just add water).
  8. Pour over freshly cooked rice. Enjoy!
