Directions
- Cook lentils according to package instructions (or use canned lentils), drain and set aside.
- In a bowl, combine cooked lentils, salt, pepper, garam masala, and ground beef. Mix with hands and form into 12 logs (for original 4 serving recipe).
- Heat oil in a pan over medium-high heat. Fry the meat logs until golden and cooked through.
- Cook rice with cardamom according to package instructions. Halve the green beans and add to the rice.
- In a food processor, blend tomatoes, ginger, scallions, half the red chili, cilantro stalks, turmeric, honey, curry paste, and coconut milk. Pour into the pan, bring to a boil, then simmer. Season with salt and pepper to taste.
- Add peas to the rice, mix, and let sit for a few minutes.
- Slice remaining red chili and coriander leaves. Garnish the curry with them, add yogurt, and serve with lemon wedges, meat, and rice.
