Directions
- Preheat oven to 400°F.
- Place sliced zucchini, squash, chopped red onion, and bell peppers on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly and bake for 20 minutes. Remove from oven and set aside.
