- Preheat oven to 400°F (200°C).
- Dice zucchini, squash, onion, and bell peppers.
- Cook pasta according to package directions. Drain when done, reserving some of the pasta water.
- Place diced vegetables on a baking sheet. Season with olive oil, salt, and pepper. Toss to coat.
- Bake for 20 minutes. Remove from oven and set aside.
- While vegetables are cooking, prepare the pesto. Blend basil, pine nuts, garlic, salt, and pepper.
- Slowly add the olive oil to the pesto until smooth.
