Ingredients

Directions

  1. Preheat oven to 400°F (200°C).
  2. Dice zucchini, squash, onion, and bell peppers.
  3. Cook pasta according to package directions. Drain when done, reserving some of the pasta water.
  4. Place diced vegetables on a baking sheet. Season with olive oil, salt, and pepper. Toss to coat.
  5. Bake for 20 minutes. Remove from oven and set aside.
  6. While vegetables are cooking, prepare the pesto. Blend basil, pine nuts, garlic, salt, and pepper.
  7. Slowly add the olive oil to the pesto until smooth.
  8. In a large bowl, add cooked pasta, roasted vegetables, and basil pesto. Toss to coat, adding pasta water as needed to reach desired consistency.
