Ingredients
- Worcestershire sauce

- Balsamic vinegar

- Brown sugar

- Orange zest

Directions
- Adjust oven rack to lower-middle position and preheat oven to 325°F.
- Coat a large Dutch oven with olive oil and bring to high heat. Season ribs with salt and pepper.
- Working in batches, add short ribs and cook until well browned on the first side, about 4 minutes. Flip ribs, add onions and smashed garlic, and continue cooking until ribs are browned on the second side and onions and garlic are softened, about 2 to 3 minutes longer.
- Add red wine to the pan, bring to a boil, and let simmer for a minute. Add beef broth, Worcestershire sauce, vinegar, brown sugar, bay leaves, and orange zest. Return to a boil, cover, and transfer to the oven. Cook until meat is fork-tender, 2 1/2 to 3 hours, flipping meat once during cooking.
- While the meat is cooking, bring potatoes and garlic to a boil in a large pot over medium-high heat. Cook until tender, about 20 to 25 minutes.
- Drain, return to pot, and add butter, milk, and sour cream. Season with salt and pepper, and mash until smooth.
- When short ribs are done, discard bay leaves and orange zest. Season with salt and pepper to taste.
- Place a mound of mashed potatoes on each plate, top with a short rib, and spoon sauce over. Serve immediately.
