Directions
- Preheat the oven to 375°F. Combine all ingredients except the bacon in a large bowl. Mix well and shape into two 6-inch long log shapes.
- On a large sheet of wax paper, lay 6 slices of bacon side by side. Place one beef roll crosswise at one end of the bacon strips and roll up, wrapping the meat with the bacon. Carefully place the roll in a 9x13" baking pan lined with heavy foil, with the bacon ends tucked under.
- Repeat with the remaining bacon and meat roll. Bake for 45-50 minutes or until the center of each roll reaches 160°F. If needed, broil for a minute or two to brown the bacon.
- Optionally, flip the rolls a couple of times during cooking and drain the grease to ensure even cooking.
