- In a stand mixer bowl, add flour, yeast, salt and sugar. Mix to combine.
- With the hook attachment on, mix while adding the water. Mix for at least 10 minutes until the dough is elastic. Make into a ball, drizzle with olive oil, cover and let rise for at least 2 hours or until doubled in size.
- Preheat the oven to 500F (or as hot as your oven can be).
- Divide the dough in two parts (or three if you wish to make smaller calzone). Roll out each into a large di Spread some pizza sauce in half of the dough, leaving a 1 inch border clean. Top with two slices of ham, mozzarella cut in slices, artichoke hearts and a drizzle of olive oil.
- Fold the empty side over the filling, and crimp the edges to seal well.
- Cut a few slits on top to vent. Drizzle with some more pizza sauce, sprinkle with parmesan cheese and drizzle with a bit of olive oil.
- Bake for about 15 minutes until golden on top.
