Ingredients

  1. Preheat oven to 425°F. Prepare a baking sheet with parchment paper or a silicone baking mat.
  2. Add chopped cauliflower to a food processor and pulse until finely ground.
  3. Place ground cauliflower in a microwave-safe bowl. Cover loosely and microwave for 4-5 minutes, or until softened. Remove cover and let cool.
  4. Once cool, squeeze out as much liquid as possible from the cauliflower using a tea towel or cheesecloth.
  5. In a large bowl, combine the squeezed cauliflower, eggs, 1/2 cup mozzarella cheese, parmesan cheese, Italian seasoning, and salt and pepper to taste.
  6. Spread the cauliflower mixture onto the prepared baking sheet into an even rectangle, approximately 15x10 inches in size. Spray lightly with cooking spray and bake for 12-15 minutes, or until golden.
  7. Spoon pizza sauce onto the crust and top with the remaining mozzarella and cheddar cheese, sliced tomatoes, turkey pepperoni, and basil leaves. Bake for another 3-5 minutes, or until the cheese is melted.
  8. Serve immediately.
