  1. Preheat the oven to 340°F.
  2. Ensure the vegetables are sliced wafer-thin to achieve crispiness.
  3. Add the carrot and sweet potato to a large mixing bowl.
  4. Add 3/4 of olive oil, salt, pepper, and paprika to the bowl. Mix well and spread in a single layer on a non-stick baking sheet.
  5. Repeat the process with the beetroot, using remaining 1/4 of olive oil and a sprinkle of paprika. Mix and spread in a single layer on another baking sheet.
  6. Place both trays in the oven and bake for about 20 minutes, turning halfway through.
