  1. Preheat the oven to 340°F.
  2. Ensure the vegetables are sliced wafer-thin to achieve crispiness.
  3. Add the carrot and sweet potato to a large mixing bowl.
  4. Add 3/4 of olive oil, salt, pepper, and paprika to the bowl. Mix well and spread in a single layer on a non-stick baking sheet.
  5. Repeat the process with the beetroot, using remaining 1/4 of olive oil and a sprinkle of paprika. Mix and spread in a single layer on another baking sheet.
  6. Place both trays in the oven and bake for about 20 minutes, turning halfway through.
  7. Monitor closely as cooking times may vary. They are done when golden brown.
  8. Allow to stand for 10 minutes to crisp up before serving.
