- Prepare Ingredients Halve lemon. Rinse remaining produce. Trim and discard ends of green beans. Pick oregano leaves, discarding stems. Finely chop parsley leaves, discarding stems.
- Cook Orzo Heat 1 tablespoon olive oil in a small pot over medium heat. When oil is shimmering, add orzo and oregano. Cook, stirring, until toasted, 1-2 minutes. Add stock and 1/2 cup water. Bring to a boil over high heat, then reduce to medium and cook, stirring, until liquid is absorbed and orzo is tender, about 12 minutes. Remove pot from heat. Season with 1/4 teaspoon salt and pepper as desired. Cover and set aside.
- Saute Green Beans While orzo cooks, heat 1 tablespoon olive oil in a large pan over medium-high heat. When oil is shimmering, add green beans and saute until bright green and tender, 3-4 minutes. Season with 1/4 teaspoon salt and pepper as desired. Divide between serving plates.
- Sear Trout Place flour on a large plate and season with 1/4 teaspoon salt and pepper as desired. Pat trout dry and season all over with 1/4 teaspoon salt. Dredge in flour to coat, shaking off any excess. Wipe pan from green beans clean and add butter and 1/2 tablespoon olive oil over medium heat. When butter is foamy, add trout and sear until crust is golden and fish is cooked through, about 3 minutes per side. Transfer to plates with green beans.
- Make Piccata Sauce Return pan from trout to medium heat and add capers, white wine, juice of 1/2 lemon, and parsley and cook until reduced by half, 1-2 minutes. Meanwhile, add juice of remaining 1/2 lemon to pot with orzo and stir to combine.
- Plate Trout Piccata Add orzo to plates with green beans and trout. Spoon piccata sauce over fish and enjoy.
