  1. Preheat the oven to 375°F.
  2. Halve the peppers and remove the seeds.
  3. In a small food processor, blend the ricotta, mozzarella, three-quarters of the parmesan, eggs, garlic powder, and parsley. If necessary, blend in batches and combine.
  4. Fill each pepper half with the egg mixture, leaving a little space at the top. Add spinach leaves on top, stir gently to submerge them.
  5. Cover with foil and bake for 35-45 minutes, or until the egg is set.
