Directions
- Peel the outer shell of the tamarind pods, then remove the veins from the outside of the fruit. (Compost the shells and veins.) Put the tamarind fruit and the water in a large saucepan and bring to a boil over high heat. Decrease the heat to medium and simmer uncovered, stirring occasionally, for 15 minutes. Remove from the heat, add the tea bags, orange juice, and vanilla syrup, and mix well. Taste and add more syrup if desired. Cover and let steep for 30 minutes. Uncover and let cool for 30 minutes. Strain through a fine-mesh sieve into a pitcher, pressing down on the solids to extract as much liquid as possible. (Compost the solids.) Refrigerate until chilled, at least 3 hours. Serve over ice, garnishing each glass with an orange slice.
