Ingredients

Directions

  1. Preheat oven to 400 degrees F.
  2. Chop onion and sweet potato. Place sweet potato on a sheet pan and bake for 30-45 minutes or until fork tender. Set aside.
  3. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  4. In a skillet over medium heat, sauté onion in olive oil until tender. Toss pasta with a bit of oil and season with salt and pepper; serve.
  5. Add sweet potato to the onion and add almond milk. Season with salt and pepper, to taste. Blend all together. Pour over the pasta and mix to combine.
  6. Enjoy!
