Directions
- Cut the chicken breasts into 1" cubes.
- Heat half of the olive oil in a skillet over medium heat. Cook the chicken for 5-8 minutes, stirring occasionally, until the internal temperature reaches 165°F and no pink remains. Transfer to a plate and set aside.
