Ingredients

Directions

  1. Preheat the oven to 400°F.
  2. Wash and trim the beets, keeping the greens for later in the recipe. Place the beets on sheets of heavy-duty aluminum foil, separating golden and red beets.
  3. Drizzle beets with olive oil and fold the foil to create a pouch. Roast on the oven rack for 1 hour or until tender. Allow to cool, then peel and quarter. Reserve any beet juices.
  4. In a small skillet over medium heat, combine walnuts and sugar. Stir occasionally until the sugar melts and caramelizes and the walnuts are toasted. Transfer to a bowl to cool.
  5. To prepare the vinaigrette, combine minced shallots, Dijon mustard, honey, vinegar, olive oil, salt, and pepper in a jar. Shake well to mix.
  6. In a large bowl or platter, toss mixed greens with chopped beet greens.
  7. Top with crumbled goat cheese, avocado slices, onions, roasted beets, and candied walnuts.
  8. Drizzle with prepared vinaigrette, reserved beet juices, and serve.
