Directions
- Cook the basmati rice according to package instructions.
- Peel and crush the garlic and ginger. Chop the spring onions, separating the whites from the greens. Finely chop the pak choi.
- Slice the prawns in half lengthwise. Heat sesame oil in a large non-stick frying pan over high heat. Add garlic and the whites of the spring onions, cooking for 30 seconds before adding the prawns.
- Once the prawns turn pink, add chili pepper paste, tomato purée, rice vinegar, and soy sauce. Stir and cook for one minute.
- Add pak choi and cook for another minute. Remove from heat, stir in the greens of the spring onions, and serve with the rice.
