Ingredients

Directions

  1. Cook the basmati rice according to package instructions.
  2. Peel and crush the garlic and ginger. Chop the spring onions, separating the whites from the greens. Finely chop the pak choi.
  3. Slice the prawns in half lengthwise. Heat sesame oil in a large non-stick frying pan over high heat. Add garlic and the whites of the spring onions, cooking for 30 seconds before adding the prawns.
  4. Once the prawns turn pink, add chili pepper paste, tomato purée, rice vinegar, and soy sauce. Stir and cook for one minute.
  5. Add pak choi and cook for another minute. Remove from heat, stir in the greens of the spring onions, and serve with the rice.
