- Pour water into bottom of Instant Pot liner.
- In a large steamer basket* add ingredients in this order: potatoes, onion, sausage and peppers. Lower the steamer basket into your Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. Move the steamer basket out of the pot and set aside. Dump out the water and dry out the Instant Pot liner.
- Add the contents from steamer basket into dry Instant Pot liner. Drizzle in the oil and the cajun seasoning and toss gently. If using cheese stir in the cheese.
- Scoop onto plates and enjoy!
