Ingredients

Directions

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish with olive oil.
  2. Quarter the cauliflower, remove the leaves and stem, and chop into bite-sized florets.
  3. Bring 8 cups of water to a boil, add salt, and cook cauliflower for 2 minutes. Drain and rinse with cold water.
  4. In a hot sauté pan, add olive oil and sausage. Cook until browned and crispy, then drain excess fat.
  5. Add onion, garlic, and thyme to the pan. Sauté for 5-6 minutes, then add crushed tomatoes and season with salt and pepper.
  6. Combine the sauce with cauliflower and spread in the baking dish. Top with bread crumbs and Parmesan, and drizzle with olive oil.
  7. Bake for 25 minutes until breadcrumbs are browned and sauce is bubbling. Let stand for 5 minutes before serving.
