- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish with olive oil.
- Quarter the cauliflower, remove the leaves and stem, and chop into bite-sized florets.
- Bring 8 cups of water to a boil, add salt, and cook cauliflower for 2 minutes. Drain and rinse with cold water.
- In a hot sauté pan, add olive oil and sausage. Cook until browned and crispy, then drain excess fat.
- Add onion, garlic, and thyme to the pan. Sauté for 5-6 minutes, then add crushed tomatoes and season with salt and pepper.
- Combine the sauce with cauliflower and spread in the baking dish. Top with bread crumbs and Parmesan, and drizzle with olive oil.
- Bake for 25 minutes until breadcrumbs are browned and sauce is bubbling. Let stand for 5 minutes before serving.
